Thought I'd start a new topic that shares mistakes we've made, so others can avoid them.

I turned on my fermentation fridge the day before a brew day to get it to temp. I didn't notice that the temperature probe was hanging outside the freezer. I set the temperature for 65F. It was colder than that in my garage, so the heat source was turned on by the temp controller. I use 2 light bulbs as a heat source, and those bulbs were on for 20 hours in a small space...

I opened the lid to lift in my newly brewed beer and smoke rolled out of the freezer. The plastic sheet on the bottom of the lid was bubbling and it was hot. I mean hot like an oven. I figured out what was going on and put the temp probe in and closed the lid. The inside of the chamber was nearly 200 deg F. It was my own adult sized Easy Bake Oven.

Lesson learned: Make sure the temp probe is inside the fermentation chamber.
